Instructions
✓ Preheat your oven to 350°F (175°C) and lightly grease a 9×5 inch loaf pan.
✓ Mix dry ingredients: in a large bowl, combine 1 3/4 cups all-purpose flour, 1 cup brown sugar, 1 tbsp baking powder, and 1/2 tsp salt. Stir until well combined.
✓ Add wet ingredients: to the same bowl, add 1 egg, 1 tsp vanilla extract, 3/4 cup milk, and 1/3 cup melted butter. Mix until a smooth batter forms.
✓ Fold in sourdough discard: gently fold in 1/2 cup of sourdough discard to the mixture.
✓ Pour into prepared pan: pour the batter into the greased loaf pan, spreading it evenly with a spatula.
✓ Bake for 45-50 minutes or until golden brown and the top is firm. You can check by inserting a toothpick; if it comes out clean, the bread is done.
✓ Glaze preparation: in a small bowl, mix 1/2 cup powdered sugar with 1 tbsp milk and 1/8 tsp vanilla extract to make a glaze.
✓ Apply glaze: once the bread has cooled slightly, brush or drizzle the glaze over the top.
