Ingredients
✓ 1 egg
✓ 3/4 cup butter (about 170 g), softened
✓ 1/2 cup light brown sugar, lightly packed
✓ 1 1/2 cups all-purpose flour
✓ 1/4 teaspoon salt
✓ 1/2 teaspoon vanilla extract
✓ ~1/4 cup jam of your choice (raspberry, strawberry, cherry, etc.) for filling
Instructions
✓ Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
✓ Cream softened butter and packed light brown sugar until smooth. Beat in the egg and vanilla extract.
✓ Gradually fold in flour and salt; mix just combined. Do not overmix.
✓ Shape dough into balls, place on baking sheet, and create thumbprints in center of each cookie.
✓ Bake for 9-11 minutes or until edges begin to set. Cool before serving.
