Ingredients
✓ 2 bell peppers, sliced
✓ 1 large onion, sliced
✓ 2 cups mushrooms, sliced
✓ 2 cups spinach, fresh or frozen
✓ 1 medium zucchini, sliced
✓ 1 (14 oz) can artichokes, drained and chopped
✓ 2 cups broccoli florets
✓ 1 cup pizza sauce
✓ 2 cups mozzarella cheese, shredded
✓ 1 cup provolone cheese, shredded
✓ 1/2 cup cheddar cheese, shredded
✓ 1 pie crust, flaky or store-bought
✓ 1 tsp Italian seasoning
✓ 1/2 tsp garlic powder
✓ 1/4 tsp red pepper flakes
✓ 1/4 cup fresh herbs like basil or oregano, chopped
✓ 2 tbsp olive oil
Instructions
✓ Preheat oven to 375°F (190°C). Prepare a 9×13 inch baking dish.
✓ Sauté onions and bell peppers in olive oil until tender.
✓ Add mushrooms, zucchini, and broccoli to the pan, cooking until vegetables are tender.
✓ Stir in spinach and artichokes, cooking until spinach is wilted. Season with Italian seasoning, garlic powder, and red pepper flakes.
✓ Spread pizza sauce on the bottom of the prepared baking dish.
✓ Add the cooked vegetable mixture on top of the sauce.
✓ Sprinkle a mix of mozzarella, provolone, and cheddar cheese over the vegetables.
✓ Cover with pie crust, sealing the edges.
✓ Bake for 35-40 minutes, or until the crust is golden brown.
✓ Remove from oven and let rest for 10-15 minutes before serving.
