Ingredients

✓ 1 lb ground beef
✓ 1 cup breadcrumbs
✓ 1/2 cup grated Parmesan cheese
✓ 1/4 cup chopped parsley
✓ 1 egg
✓ 1 tsp garlic powder
✓ 1 tsp onion powder
✓ 1 tsp salt
✓ 1/2 tsp black pepper
✓ 1 cup shredded mozzarella cheese

Instructions

✓ Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

✓ In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix well until just combined; do not overmix or the texture will suffer.

✓ Form the mixture into small, uniform balls about 1-inch in diameter.

✓ Take each meatball and make a small indentation on top using your thumb or a spoon. Fill this indentation with shredded mozzarella cheese.

✓ Gently push the edges of the meatball together to seal in the cheese, ensuring it’s well contained.

✓ Place the stuffed meatloaf bites on the prepared baking sheet and bake for 18-20 minutes or until the exterior is golden brown and the internal temperature reaches 160°F (71°C).

✓ Use a meat thermometer to ensure the center of each bite is fully cooked.

✓ Remove from the oven and let them cool on a wire rack for about 5 minutes.

✓ Serve warm. These are best served immediately while they’re still hot, but if you need to store, keep in an airtight container at room temperature for up to one day.
