Ingredients
✓ 8 oz pasta
✓ 2 cups corn (fresh or canned)
✓ 1 red bell pepper, diced
✓ 1/2 cup red onion, finely chopped
✓ 1/4 cup fresh cilantro, chopped
✓ 1/4 cup mayonnaise
✓ 2 tbsp lime juice
✓ 1 tsp chili powder

Instructions
✓ Bring a large pot of salted water to a boil. Add pasta and cook for 7-9 minutes.
✓ If using fresh corn, cut off the kernels from the cob; if canned, drain and rinse thoroughly.
✓ In a skillet over medium heat, sauté corn with olive oil for 5 minutes on one side, then flip and grill for another 4-5 minutes (optional).
✓ Cook pasta in boiling salted water according to package instructions until al dente. Drain and rinse with cold water.
✓ In a large bowl, combine cooked pasta, grilled corn, diced red bell pepper, chopped red onion, and cilantro.
✓ Drizzle mayonnaise and lime juice over the mixture; stir well.
✓ Season with salt and pepper as needed.
✓ Toss again before serving to ensure even distribution of flavors.
