Ingredients

✓ 8 ounces mushrooms (sliced, such as cremini or button)
✓ 4 cups fresh spinach (washed and roughly chopped)
✓ 1 cup heavy cream
✓ 1/2 cup grated Parmesan cheese (plus more for serving)
✓ Salt and pepper (to taste)
✓ 1/2 teaspoon red pepper flakes (optional, for heat)
✓ Fresh parsley (chopped, for garnish)

Instructions

✓ Bring a large pot of salted water to a boil. Add gnocchi according to package instructions.

✓ Heat olive oil in a skillet over medium-high heat until it shimmers.

✓ Add onion and garlic to the pan; sauté for about 5 minutes or until translucent and fragrant.

✓ Add sliced mushrooms, reduce heat if necessary; cook for approximately 10-12 minutes or until browned slightly.

✓ Add chopped spinach to skillet; stir gently. Cook just until spinach wilts.

✓ Once gnocchi are done cooking, drain them and add to skillet with sautéed vegetables. Toss well.
