Ingredients
✓ 1½ cups pulled pork
✓ ⅓ cup BBQ sauce (your favorite kind)
✓ 1 small onion, finely chopped
✓ 1 tablespoon olive oil
Instructions
✓ Preheat oven to 375°F.
✓ Mix the pulled pork with the BBQ sauce and a pinch of salt & pepper in a bowl. Set aside.
✓ In another mixing bowl, combine all ingredients except for olive oil; mix until well incorporated before adding it gradually while bringing together into one cohesive ball. Cover this mixture with plastic wrap and refrigerate for at least an hour to allow flavors to meld.
✓ Roll out the dough on a lightly floured surface using 1/8-inch thickness or slightly thicker if preferred, then cut circles from the dough.
✓ Place about tablespoon of pulled pork mix in each circle. Fold over into half-moon shapes and press edges together tightly with fork tines so filling doesn’t spill out during baking.
Notes
Make sure to refrigerate the dough before rolling out; this helps keep it from becoming too sticky. For best results, chill filled puffs again after shaping but not during baking process as you want them slightly soft when baked through inside while golden brown outside.
