Ingredients
✓ 1 pound dried white beans (great northern or navy)
✓ 2 medium yellow onions
✓ 3 celery stalks
✓ 1 large green bell pepper
✓ 2 jalapeños
✓ ½ cup loosely packed fresh parsley leaves
✓ 1 bunch green onions
✓ 4 cloves garlic
✓ ½ pound thick-cut bacon
✓ ¾ pound smoked sausage or andouille
✓ 2 cups chicken stock
✓ ¾ pound ham hock (smoked or fresh)
✓ 1 teaspoon dried oregano
✓ ½ teaspoon dried thyme
✓ ½ teaspoon black pepper
✓ 2 bay leaves
✓ Cajun seasoning to taste
✓ Cooked rice (for serving)
Instructions
✓ Soak the dried white beans in water for at least 6 hours or overnight.
✓ In a large pot, cook the bacon and sausage until crispy. Remove and set aside.
✓ In the same pot, sweat the onions, celery, and bell peppers until soft and fragrant.
✓ Add garlic, jalapeños, oregano, thyme, black pepper, and Cajun seasoning.
✓ Add the soaked beans and chicken stock. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
✓ Add the cooked meats (bacon, sausage, ham hock) and simmer for another 10 minutes.
✓ Stir in fresh parsley and green onions before serving.
✓ Serve the stew over cooked rice.
Notes
This dish tastes even better the next day as flavors meld together. Serve with crusty bread or a side salad.
