✓ 1 teaspoon dried thyme

Instructions
✓ Preheat oven to 400°F (205°C).
✓ Pat the chicken dry with paper towels and season generously with salt and pepper.
✓ In a small bowl, mix olive oil, lemon zest, minced garlic, oregano, thyme, and grated Parmesan cheese.
✓ Place the chicken thighs or breasts in a large baking dish. Tuck the skin side down for optimal browning.
✓ Pour the lemon-Parmesan mixture over the chicken pieces, making sure each piece is evenly coated.
✓ Bake in the preheated oven for 20 minutes or until the skin starts to crisp up.
✓ After 20 minutes, flip the chicken pieces over so that the skin side is now on top.
✓ Continue baking for another 15-20 minutes or until the internal temperature reaches 165°F (74°C).
✓ Remove the dish from the oven once the chicken is fully cooked and let it rest for a few minutes before serving.
✓ Garnish with chopped fresh parsley for an extra burst of freshness.
