Instructions
✓ Preheat the oven to 350°F (180°C). Line a muffin tin with cupcake liners.
✓ In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
✓ Sift flour, baking powder, baking soda, and salt into the bowl; mix just until combined. Fold in buttermilk and peach preserves.
✓ Fill cupcake liners about 2/3 full with batter. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
✓ Meanwhile, in a mixing bowl, beat cream cheese and powdered sugar until smooth. Add milk and mix well. Stir in diced peaches.
✓ Once cupcakes are cooled, frost the tops of each cupcake with the cream cheese frosting. Drizzle with honey and garnish with sugar crystals.
