✓ 2-3 large Yukon Gold or Russet potatoes
✓ 2 tablespoons olive oil
✓ 1 teaspoon salt
✓ 1/2 teaspoon black pepper
✓ 1/2 teaspoon garlic powder
✓ 1/4 cup grated parmesan cheese (optional)
✓ 2 sprigs fresh rosemary (optional)
Instructions
✓ Preheat oven to 425°F (220°C).
✓ Scrub and dry potatoes, then cut into desired shape.
✓ Toss potatoes with olive oil, salt, pepper, and garlic powder.
✓ Roast in preheated oven for 20-25 minutes, or until golden brown.
✓ Toss with parmesan cheese and rosemary, if using.
✓ Return to oven for an additional 2-5 minutes, or until cheese is melted and bubbly.
Notes
For crisper potatoes, dry them thoroughly before roasting and don’t overcrowd the baking sheet.
