Ingredients
🥄 1 and 1/2 cups old-fashioned rolled oats
🥄 1/2 cup almond or other nut butter
🥄 1 scoop vanilla protein powder (should be 50-60 grams)
🥄 1/3 cup dried cranberries (chopped)
🥄 1/4 cup maple syrup
🥄 2 tablespoons orange juice
🥄 1 tablespoon chia seeds
🥄 1 teaspoon orange zest
🥄 1/2 teaspoon vanilla extract
🥄 1/4 teaspoon each ground cinnamon, ginger, and kosher or flaked sea salt
Instructions
👨🍳 Combine the dry ingredients: oats, protein powder, ground cinnamon, ground ginger, and sea salt in a large mixing bowl. Stir well to combine.
👨🍳 Mix in the wet ingredients: almond butter, maple syrup, orange juice, orange zest, and vanilla extract in a small bowl until smooth. Pour into the dry ingredients.
👨🍳 Fold in the cranberries and chia seeds gently until evenly incorporated. The mixture should be thick and slightly sticky.
👨🍳 Chill the mixture in the refrigerator for at least 30 minutes to firm up.
👨🍳 Form the bites by scooping out portions and rolling them into balls. Place on a parchment-lined plate or tray.
👨🍳 Refrigerate for at least 1 hour before serving to help the bites hold their shape.
Notes
These bites can be stored in the refrigerator for up to one week or frozen for up to two months. They are best when chilled before serving.
