Ingredients

🥄 1 and 1/2 cups old-fashioned rolled oats
🥄 1/2 cup almond or other nut butter
🥄 1 scoop vanilla protein powder (should be 50-60 grams)
🥄 1/3 cup dried cranberries (chopped)
🥄 1/4 cup maple syrup
🥄 2 tablespoons orange juice
🥄 1 tablespoon chia seeds
🥄 1 teaspoon orange zest
🥄 1/2 teaspoon vanilla extract
🥄 1/4 teaspoon each ground cinnamon, ginger, and kosher or flaked sea salt

Instructions

👨‍🍳 Combine the dry ingredients: oats, protein powder, ground cinnamon, ground ginger, and sea salt in a large mixing bowl. Stir well to combine.

👨‍🍳 Mix in the wet ingredients: almond butter, maple syrup, orange juice, orange zest, and vanilla extract in a small bowl until smooth. Pour into the dry ingredients.

👨‍🍳 Fold in the cranberries and chia seeds gently until evenly incorporated. The mixture should be thick and slightly sticky.

👨‍🍳 Chill the mixture in the refrigerator for at least 30 minutes to firm up.

👨‍🍳 Form the bites by scooping out portions and rolling them into balls. Place on a parchment-lined plate or tray.
