Cottage Cheese Pancakes are a unique and creamy twist on traditional pancakes, perfect for lazy Sunday mornings or casual family gatherings.

  • Total Time: 35
  • Yield: 8-10 pancakes

Ingredients

✓ 1 cup cottage cheese
✓ 3 large eggs
✓ 1 teaspoon vanilla extract
✓ 2 tablespoons rolled oats
✓ 2 tablespoons cornstarch
✓ 1/2 teaspoon baking powder
✓ 1/4 teaspoon salt
✓ 1 tablespoon honey or maple syrup (optional)
✓ 1/2 teaspoon ground cinnamon (optional)
✓ 1 to 2 teaspoons butter or neutral oil for cooking

Instructions

✓ In a large mixing bowl, combine the cottage cheese, eggs, vanilla extract, rolled oats, cornstarch, baking powder, salt, honey (if using), and cinnamon (if using). Mix until all ingredients are well combined.

✓ Ensure the mixture is smooth without any lumps. If too thick, add a little milk or water one tablespoon at a time.

✓ Heat a nonstick skillet over medium heat and lightly grease it with butter or neutral oil.

✓ Pour about 1/4 cup of batter into the pan for each pancake, spreading it out slightly to form a circle. Cook for 2-3 minutes on one side until golden brown, then flip and cook for another 1-2 minutes.

✓ Keep pancakes warm in a low oven or wrap them in a clean kitchen towel until ready to serve.

✓ Serve the pancakes hot with your choice of toppings such as fresh berries, whipped cream, or a drizzle of maple syrup.

Notes

Ensure the cottage cheese is at room temperature for best results. Overmixing can cause tough pancakes.
