Ingredients
✓ 2 cups broccoli florets, steamed and chopped
✓ 1 cup shredded cheddar cheese
✓ 1/2 cup breadcrumbs
✓ 1/4 cup grated Parmesan cheese
✓ 2 large eggs
✓ 1 teaspoon garlic powder
✓ 1/2 teaspoon salt
✓ 1/4 teaspoon black pepper
✓ Oil for frying
Instructions
✓ Steam and chop the broccoli florets.
✓ Mix the shredded cheddar, breadcrumbs, grated Parmesan, garlic powder, salt, and pepper in a bowl.
✓ Add the steamed and chopped broccoli to the cheese mixture and gently fold until combined.
✓ Beat the eggs in another bowl and dip each broccoli ball into the egg mixture before coating with more breadcrumbs.
✓ Heat oil in a pan over medium heat. Fry the coated balls for 2-3 minutes on each side or until golden brown and crispy.
✓ Drain on paper towels and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For best results, reheat in a pan with oil or oven-bake at 350°F (175°C).
