Ingredients

  • 4 pounds bone-in beef short ribs
  • Salt and freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 1 bottle (750 ml) red wine
  • 2 cups beef stock
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat the vegetable oil over medium-high heat. Brown the short ribs on all sides, then remove and set aside.
  4. Add the onion, carrots, and celery to the pot and cook until softened.
  5. Stir in the flour and tomato paste, cooking for another minute.
  6. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  7. Return the short ribs to the pot and add the beef stock, thyme, rosemary, and bay leaves.
  8. Bring to a simmer, then cover and transfer to the oven.
  9. Bake for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  10. Remove the herbs and bay leaves before serving.

Notes

  • For a thicker sauce, remove the ribs after cooking and reduce the sauce on the stovetop.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
