A comforting and delicious braised short ribs recipe that melts in your mouth, perfect for a cozy meal.
Ingredients
- 4 pounds bone-in beef short ribs
- Salt and freshly ground black pepper
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 tablespoons all-purpose flour
- 1 tablespoon tomato paste
- 1 bottle (750 ml) red wine
- 2 cups beef stock
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
Instructions
- Preheat the oven to 350°F (175°C).
- Season the short ribs with salt and pepper.
- In a large Dutch oven, heat the vegetable oil over medium-high heat. Brown the short ribs on all sides, then remove and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened.
- Stir in the flour and tomato paste, cooking for another minute.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot.
- Return the short ribs to the pot and add the beef stock, thyme, rosemary, and bay leaves.
- Bring to a simmer, then cover and transfer to the oven.
- Bake for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
- Remove the herbs and bay leaves before serving.
Notes
- For a thicker sauce, remove the ribs after cooking and reduce the sauce on the stovetop.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
