Zucchini Corn Fritters are a crispy and flavorful summer snack, perfect for enjoying the fresh produce of the season.


Ingredients

  • 2 cups grated zucchini
  • 1 cup corn kernels
  • 1/4 cup chopped scallions
  • 1/4 cup chopped fresh herbs (such as parsley or cilantro)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • Salt and pepper to taste
  • Olive oil for frying


Instructions

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine the grated zucchini, corn kernels, scallions, and herbs.
  3. Add the flour, Parmesan cheese, and egg to the bowl. Mix until well combined. Season with salt and pepper.
  4. Heat olive oil in a large skillet over medium heat.
  5. Scoop about 2 tablespoons of the mixture for each fritter and place it in the skillet. Flatten slightly with a spatula.
  6. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove from the skillet and drain on paper towels. Serve warm.
