Ingredients
- 2 cups grated zucchini
- 1 cup corn kernels
- 1/4 cup chopped scallions
- 1/4 cup chopped fresh herbs (such as parsley or cilantro)
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, corn kernels, scallions, and herbs.
- Add the flour, Parmesan cheese, and egg to the bowl. Mix until well combined. Season with salt and pepper.
- Heat olive oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of the mixture for each fritter and place it in the skillet. Flatten slightly with a spatula.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels. Serve warm.
Notes
- Ensure to squeeze out as much moisture as possible from the zucchini to achieve crispy fritters.
