Description

A savory and satisfying Thai stir-fry noodle dish featuring wide rice noodles, broccoli, and a flavorful soy sauce blend.

Ingredients

  • 200g wide rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 bell pepper, sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Soak the wide rice noodles in warm water for about 20 minutes or until softened. Drain and set aside.
  2. In a small bowl, mix together soy sauce, oyster sauce, dark soy sauce, and sugar. Set aside.
  3. Heat vegetable oil in a large pan or wok over medium heat. Add minced garlic and sauté until fragrant.
  4. Add broccoli, carrot, and bell pepper to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Add the soaked noodles to the pan and pour the sauce mixture over them. Toss everything together to coat the noodles and vegetables evenly with the sauce.
  6. Continue to stir-fry for another 2-3 minutes until the noodles are heated through and have absorbed the sauce.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • For a spicier version, add chili flakes or fresh chili slices.
  • Feel free to add tofu or your choice of protein for a more filling meal.
