Description

Juicy and flavorful vegan sweet potato burgers that are hearty and perfect for a plant-based main dish.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 cup rolled oats
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the sweet potatoes until tender, then drain and mash them in a large bowl.
  3. Add the black beans to the mashed sweet potatoes and mash slightly, leaving some beans whole for texture.
  4. Stir in the oats, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  5. Form the mixture into patties.
  6. Heat olive oil in a skillet over medium heat and cook the patties for 3-4 minutes on each side until golden brown.
  7. Transfer the patties to a baking sheet and bake in the preheated oven for 10 minutes to firm up.
  8. Serve warm with your choice of toppings and buns.
