Juicy and flavorful vegan sweet potato burgers that are hearty and perfect for a plant-based main dish.
Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 can black beans, drained and rinsed
- 1 cup rolled oats
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Boil the sweet potatoes until tender, then drain and mash them in a large bowl.
- Add the black beans to the mashed sweet potatoes and mash slightly, leaving some beans whole for texture.
- Stir in the oats, cumin, smoked paprika, salt, and pepper. Mix until well combined.
- Form the mixture into patties.
- Heat olive oil in a skillet over medium heat and cook the patties for 3-4 minutes on each side until golden brown.
- Transfer the patties to a baking sheet and bake in the preheated oven for 10 minutes to firm up.
- Serve warm with your choice of toppings and buns.
Notes
- For a gluten-free option, use gluten-free oats.
- These burgers can be frozen for up to 3 months.
