- 1 cup lentils
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Buns for serving
Instructions
- Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until lentils are tender.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the chopped bell pepper to the skillet and cook for another 5 minutes.
- Stir in the cooked lentils, tomato sauce, tomato paste, soy sauce, apple cider vinegar, maple syrup, smoked paprika, and cumin. Mix well.
- Let the mixture simmer for about 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
