  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Buns for serving


Instructions

  1. Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until lentils are tender.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the chopped bell pepper to the skillet and cook for another 5 minutes.
  4. Stir in the cooked lentils, tomato sauce, tomato paste, soy sauce, apple cider vinegar, maple syrup, smoked paprika, and cumin. Mix well.
  5. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
