Ukrainian Syrniki are delightful, fluffy cheese pancakes that are a staple in Eastern European cuisine. Made with farmer’s cheese, these pancakes are perfect for breakfast or as a sweet treat.
Ingredients
- 500g farmer’s cheese
- 2 eggs
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour, plus more for dusting
- Oil for frying
Instructions
- In a large bowl, combine the farmer’s cheese, eggs, sugar, vanilla extract, and salt. Mix until well combined.
- Add the flour to the cheese mixture and stir until a dough forms. The dough should be soft but not too sticky.
- Dust a clean surface with flour. Take a small portion of the dough and form it into a ball, then flatten it into a patty about 1/2 inch thick. Repeat with the remaining dough.
- Heat oil in a frying pan over medium heat. Fry the syrniki in batches, cooking each side for about 3-4 minutes or until golden brown.
- Remove the syrniki from the pan and drain on paper towels. Serve warm with sour cream, jam, or honey.
Notes
- Ensure the farmer’s cheese is well-drained to prevent the dough from becoming too wet.
- Adjust the sugar to taste if you prefer a sweeter pancake.
