- Crust + Crumble:
- 2 cups golden sandwich cookies, crushed
- 4 tbsp unsalted butter, melted
- 1 tbsp sugar
- Pinch of salt
- Strawberry Cream Layer:
- 1 cup fresh or frozen strawberries, hulled
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream, whipped
- Vanilla Cream Layer:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 1 cup heavy cream, whipped
Instructions
- Crush cookies, then mix with butter, sugar, and salt. Press half into a parchment-lined 8×8 pan. Reserve the rest for topping.
- Puree strawberries. Beat cream cheese, sugar, and vanilla. Fold in strawberry puree and whipped cream. Spread over crust.
- Beat cream cheese, sugar, and vanilla again. Fold in whipped cream. Spread on top of strawberry layer.
- Top with remaining cookie crumble. Freeze for at least 6 hours.
- Lift, slice, and serve straight from the freezer!
Notes
- Use fresh strawberries if possible for best flavor.
- Dip knife in hot water for clean slicing.
- Bars can be frozen for up to 1 month.
- Add lemon zest or swirl in jam for a twist.
