Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn kernels
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups vegetable broth
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until onion is translucent.
- Add diced sweet potatoes, chili powder, cumin, and smoked paprika. Stir to coat the sweet potatoes with spices.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer for about 15 minutes, or until sweet potatoes are tender.
- Add black beans, diced tomatoes, and corn. Stir well to combine.
- Season with salt and pepper to taste.
- Simmer for an additional 10 minutes to allow flavors to meld.
