Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn kernels
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 1 tablespoon olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until onion is translucent.
  3. Add diced sweet potatoes, chili powder, cumin, and smoked paprika. Stir to coat the sweet potatoes with spices.
