Ingredients
- 2 cups fresh sweet corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup chopped scallions
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup buttermilk or buttermilk alternative
- 1 large egg
- Vegetable oil for frying
Instructions
- In a large bowl, combine the flour, cornmeal, baking powder, salt, and pepper.
- Add the corn kernels and scallions to the dry ingredients and mix well.
- In a separate bowl, whisk together the buttermilk and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat vegetable oil in a large skillet over medium heat.
- Spoon the batter into the skillet, forming small fritters.
- Cook for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels.
- Serve warm and enjoy!
Notes
- For a spicier version, add a pinch of cayenne pepper to the batter.
