Ingredients

  • 2 cups fresh sweet corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup chopped scallions
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buttermilk or buttermilk alternative
  • 1 large egg
  • Vegetable oil for frying


Instructions

  1. In a large bowl, combine the flour, cornmeal, baking powder, salt, and pepper.
  2. Add the corn kernels and scallions to the dry ingredients and mix well.
  3. In a separate bowl, whisk together the buttermilk and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Heat vegetable oil in a large skillet over medium heat.
