Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup fresh blueberries
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.
  3. Remove from heat and let it cool.
  4. In a large bowl, combine the cooked quinoa, blueberries, cucumber, red onion, mint, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the quinoa mixture and toss to combine.
  7. If using, sprinkle the feta cheese on top before serving.

Notes

  • For a vegan option, omit the feta cheese.
  • This salad can be served chilled or at room temperature.
