A refreshing and protein-packed salad perfect for summer, featuring quinoa, blueberries, and a mix of fresh ingredients.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup fresh blueberries
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.
- Remove from heat and let it cool.
- In a large bowl, combine the cooked quinoa, blueberries, cucumber, red onion, mint, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- If using, sprinkle the feta cheese on top before serving.
Notes
- For a vegan option, omit the feta cheese.
- This salad can be served chilled or at room temperature.
- Feel free to add other seasonal fruits or nuts for extra flavor and texture.
