For the Cheesecake Filling:

4 oz cream cheese (half a block), softened

½ tsp vanilla extract

¼ cup heavy whipping cream

2 tbsp powdered sugar (optional, for a slightly sweeter bite)

For the Strawberry Crunch Coating:

810 golden Oreos, crushed

1 tbsp strawberry gelatin powder

1 tbsp melted butter


Instructions

Make the Crunch Coating:
In a bowl, mix crushed golden Oreos with strawberry gelatin powder. Stir in melted butter until the mixture is crumbly and resembles a crunchy topping. Set aside.

Prepare the Cheesecake Filling:
In a mixing bowl, beat the softened cream cheese until smooth. Add vanilla extract and powdered sugar (if using), and mix well.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

Shape and Chill the Bites:
Scoop the cheesecake mixture using a small cookie scoop or spoon and roll into 1-inch balls. Place on a parchment-lined tray and freeze for 20–30 minutes until firm.

Coat the Bites:
Once chilled, roll each cheesecake ball in the strawberry crunch topping, gently pressing the coating onto the surface.

Serve or Store:
Enjoy right away or refrigerate in an airtight container for up to 3 days. You can also freeze for longer storage.

Notes

For a more natural coating, you can substitute freeze-dried strawberries (crushed into powder) for the gelatin.
