Ingredients
- 12 large mushrooms, stems removed
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add chopped spinach to the skillet and cook until wilted. Remove from heat.
- In a bowl, combine the cooked spinach, feta cheese, cream cheese, salt, and pepper. Mix well.
- Stuff each mushroom cap with the spinach and feta mixture.
- Place the stuffed mushrooms on a baking sheet and bake for 20 minutes or until the mushrooms are tender.
- Serve warm and enjoy!
Notes
- For a spicier kick, add a pinch of red pepper flakes to the filling.
- These can be prepared ahead of time and baked just before serving.
