Spicy Thai Peanut Noodles are a quick and flavorful dinner option, combining sweet, savory, and spicy elements in a creamy peanut sauce.
Ingredients
- 200g rice noodles
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon sriracha sauce
- 2 cloves garlic, minced
- 1/4 cup chopped peanuts
- 2 green onions, sliced
- 1 tablespoon sesame oil
- 1/4 cup cilantro, chopped
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, sriracha, and minced garlic until smooth.
- In a large pan, heat sesame oil over medium heat. Add the cooked noodles and pour the peanut sauce over them.
- Toss the noodles in the sauce until well coated and heated through.
- Garnish with chopped peanuts, green onions, and cilantro before serving.
Notes
- Adjust the level of spiciness by adding more or less sriracha.
- For a gluten-free version, use tamari instead of soy sauce.
