Description

Spicy Thai Peanut Noodles are a quick and flavorful dinner option, combining sweet, savory, and spicy elements in a creamy peanut sauce.


Ingredients

  • 200g rice noodles
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha sauce
  • 2 cloves garlic, minced
  • 1/4 cup chopped peanuts
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • 1/4 cup cilantro, chopped


Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, sriracha, and minced garlic until smooth.
  3. In a large pan, heat sesame oil over medium heat. Add the cooked noodles and pour the peanut sauce over them.
  4. Toss the noodles in the sauce until well coated and heated through.
  5. Garnish with chopped peanuts, green onions, and cilantro before serving.

Notes

  • Adjust the level of spiciness by adding more or less sriracha.
  • For a gluten-free version, use tamari instead of soy sauce.
