Ingredients
- 200g soba noodles
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon chili paste
- 2 scallions, thinly sliced
- 1 carrot, julienned
- 1 cucumber, julienned
- 2 tablespoons sesame seeds
Instructions
- Cook the soba noodles according to package instructions. Drain and rinse under cold water.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and chili paste to make the dressing.
- In a large bowl, combine the cooked soba noodles, scallions, carrot, and cucumber.
- Pour the dressing over the noodle mixture and toss to combine.
- Sprinkle with sesame seeds before serving.
