Ingredients

  • 200g soba noodles

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon chili paste
  • 2 scallions, thinly sliced
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 2 tablespoons sesame seeds


Instructions

  1. Cook the soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and chili paste to make the dressing.
  3. In a large bowl, combine the cooked soba noodles, scallions, carrot, and cucumber.
