Description
A quick and delicious vegan lunch option featuring spicy chickpeas and a creamy tahini sauce wrapped in a tortilla.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Water, as needed
- 4 large tortillas
- 1 cup lettuce, shredded
- 1 tomato, sliced
Instructions
- In a pan, heat olive oil over medium heat. Add chickpeas, smoked paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes until chickpeas are slightly crispy.
- In a small bowl, mix tahini, lemon juice, garlic, and a bit of water to achieve a creamy sauce consistency.
- Warm the tortillas in a pan or microwave.
- Spread a generous amount of tahini sauce on each tortilla.
- Top with spicy chickpeas, lettuce, and tomato slices.
- Wrap the tortillas tightly and serve immediately.
Notes
- Adjust the spice level by adding more or less cayenne pepper.
- For extra flavor, add a sprinkle of cumin to the chickpeas.
