A quick and delicious vegan lunch option featuring spicy chickpeas and a creamy tahini sauce wrapped in a tortilla.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Water, as needed
  • 4 large tortillas
  • 1 cup lettuce, shredded
  • 1 tomato, sliced


Instructions

  1. In a pan, heat olive oil over medium heat. Add chickpeas, smoked paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes until chickpeas are slightly crispy.
  2. In a small bowl, mix tahini, lemon juice, garlic, and a bit of water to achieve a creamy sauce consistency.
  3. Warm the tortillas in a pan or microwave.
  4. Spread a generous amount of tahini sauce on each tortilla.
  5. Top with spicy chickpeas, lettuce, and tomato slices.
  6. Wrap the tortillas tightly and serve immediately.

Notes

  • Adjust the spice level by adding more or less cayenne pepper.
  • For extra flavor, add a sprinkle of cumin to the chickpeas.
