Ingredients
- 2 cups of short-grain rice
- 1 pinch of saffron threads
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of peas
- 4 cups of vegetable broth
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Heat the olive oil in a large paella pan over medium heat.
- Add the chopped onion and garlic, sauté until the onion is translucent.
- Add the sliced bell peppers and cook for another 5 minutes.
- Stir in the rice and saffron, ensuring the rice is well coated with the oil.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes, without stirring.
- Add the peas and continue to cook for another 5 minutes, or until the rice is tender and the liquid is absorbed.
- Season with salt and pepper to taste.
- Remove from heat and let it rest for 5 minutes before serving.
- Garnish with lemon wedges and serve warm.
