Ingredients

  • 2 cups of short-grain rice
  • 1 pinch of saffron threads
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of peas
  • 4 cups of vegetable broth
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Heat the olive oil in a large paella pan over medium heat.
  2. Add the chopped onion and garlic, sauté until the onion is translucent.
  3. Add the sliced bell peppers and cook for another 5 minutes.
  4. Stir in the rice and saffron, ensuring the rice is well coated with the oil.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat to low and simmer for 15 minutes, without stirring.
  7. Add the peas and continue to cook for another 5 minutes, or until the rice is tender and the liquid is absorbed.
  8. Season with salt and pepper to taste.
  9. Remove from heat and let it rest for 5 minutes before serving.
  10. Garnish with lemon wedges and serve warm.
