Description

Spanish Churro-Inspired Pancakes are a delightful breakfast treat that combines the crispy edges and fluffy inside of pancakes with the sweet and spicy flavor of churros.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)


Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Remove from skillet and immediately sprinkle with cinnamon sugar.
  8. Repeat with remaining batter.
  9. Serve warm and enjoy!

Notes

  • For extra crispiness, cook pancakes a little longer on each side.
  • Adjust the amount of cinnamon sugar to taste.
