- 4 large bell peppers, halved and seeded
- 1 cup cooked black beans
- 1 cup corn kernels
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine black beans, corn, rice, cheese, olive oil, cumin, chili powder, salt, and pepper.
- Stuff each bell pepper half with the mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
- Serve warm and enjoy!
