Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine black beans, corn, rice, cheese, olive oil, cumin, chili powder, salt, and pepper.
  3. Stuff each bell pepper half with the mixture.
  4. Place the stuffed peppers in a baking dish and cover with foil.
  5. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
  6. Serve warm and enjoy!
