Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese
  • 2 tablespoons olive oil


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Remove beef from the skillet and set aside.
  4. In the same skillet, add onions, bell pepper, and garlic. Sauté until softened.
  5. Add diced potatoes and cook until they start to soften.
  6. Stir in chili powder, cumin, salt, and pepper.
  7. Return the beef to the skillet and mix well.
  8. Add corn and black beans, stirring to combine.
  9. Cover and cook until potatoes are tender.
  10. Sprinkle cheese on top, cover, and let it melt before serving.

Notes

  • You can substitute ground turkey for a leaner option.
  • Adjust spices to taste for more or less heat.
