Description

Ajvar is a traditional Serbian roasted pepper spread that captures the essence of Eastern European flavors.


Ingredients

  • 6 red bell peppers
  • 2 medium eggplants
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon vinegar
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Place the red peppers and eggplants on a baking sheet and roast for 30-40 minutes, turning occasionally, until the skins are charred and the vegetables are soft.
  3. Remove from the oven and let cool slightly. Peel the skins off the peppers and eggplants and remove the seeds.
  4. In a food processor, combine the roasted peppers, eggplants, garlic, olive oil, and vinegar. Blend until smooth.
  5. Season with salt and black pepper to taste.
  6. Transfer the ajvar to a jar and refrigerate for at least an hour before serving to allow the flavors to meld.

Notes

  • Ajvar can be stored in the refrigerator for up to two weeks.
  • For a spicier version, add a hot pepper to the mix.
