Description
Ajvar is a traditional Serbian roasted pepper spread that captures the essence of Eastern European flavors.
Ingredients
- 6 red bell peppers
- 2 medium eggplants
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon vinegar
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Place the red peppers and eggplants on a baking sheet and roast for 30-40 minutes, turning occasionally, until the skins are charred and the vegetables are soft.
- Remove from the oven and let cool slightly. Peel the skins off the peppers and eggplants and remove the seeds.
- In a food processor, combine the roasted peppers, eggplants, garlic, olive oil, and vinegar. Blend until smooth.
- Season with salt and black pepper to taste.
- Transfer the ajvar to a jar and refrigerate for at least an hour before serving to allow the flavors to meld.
Notes
- Ajvar can be stored in the refrigerator for up to two weeks.
- For a spicier version, add a hot pepper to the mix.
