Description
Isombe is a traditional Rwandan dish made from cassava leaves, often cooked with peanut sauce and eggplant, offering a rich and flavorful taste of East African cuisine.
Ingredients
- 500g cassava leaves, finely chopped
- 1 cup peanut butter
- 2 eggplants, diced
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tablespoons vegetable oil
- Salt to taste
- Water as needed
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the tomatoes and cook until they are soft.
- Stir in the diced eggplants and cook for about 5 minutes.
- Add the chopped cassava leaves and mix well.
- In a separate bowl, mix the peanut butter with a little water to form a smooth paste.
- Add the peanut paste to the pot and stir to combine.
- Season with salt and add enough water to cover the mixture.
- Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, stirring occasionally.
- Once the cassava leaves are tender and the flavors have melded, remove from heat and serve hot.
