Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 avocado, sliced
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  3. In a large bowl, combine red bell pepper, zucchini, cherry tomatoes, and red onion. Drizzle with olive oil, and season with salt, pepper, garlic powder, and paprika. Toss to coat evenly.
  4. Spread the vegetables on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until tender and slightly charred.
  5. Once the quinoa is cooked, fluff it with a fork and divide it into serving bowls.
  6. Top the quinoa with roasted vegetables and sliced avocado.
  7. Garnish with fresh parsley before serving.
