Ingredients
- 2 pounds of potatoes, peeled and cubed
- 1 head of garlic
- 2 tablespoons olive oil
- 1/2 cup cream
- 4 tablespoons butter or butter alternative
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Squeeze the roasted garlic into the pot with the potatoes.
- Add cream and butter, then mash until smooth and creamy.
- Season with salt and pepper to taste.
