Ingredients

  • 2 pounds of potatoes, peeled and cubed
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1/2 cup cream
  • 4 tablespoons butter or butter alternative

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  3. Boil the potatoes in salted water until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot.
  5. Squeeze the roasted garlic into the pot with the potatoes.
  6. Add cream and butter, then mash until smooth and creamy.
  7. Season with salt and pepper to taste.
