Roasted Garlic Mashed Cauliflower is a creamy and delicious low-carb alternative to traditional mashed potatoes, perfect for those looking to reduce their carbohydrate intake without sacrificing flavor.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 whole garlic bulb
  • 2 tablespoons olive oil
  • 2 tablespoons butter or cream alternative
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the top off the garlic bulb to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  3. Steam the cauliflower florets until tender, about 10-12 minutes.
  4. Once the garlic is roasted, squeeze the cloves out of their skins.

  6. Adjust seasoning to taste and garnish with fresh parsley if desired.
