Ingredients
- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil

- 1/2 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1 avocado
- 1/4 cup sour cream or vegan alternative
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden and tender.
