Ingredients

  • 1 head of cauliflower, cut into florets

  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1 avocado
  • 1/4 cup sour cream or vegan alternative
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden and tender.
  4. While the cauliflower is roasting, prepare the avocado crema by blending the avocado, sour cream, and lime juice until smooth.
  5. Warm the corn tortillas in a dry skillet over medium heat.
