Ingredients

  • 4 medium beets, washed and trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups arugula
  • 1/2 cup crumbled goat cheese
  • 1/4 cup walnuts, toasted
  • 2 tablespoons balsamic glaze


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and place on a baking sheet.
  3. Roast in the preheated oven for 45-60 minutes, or until tender.
  4. Allow beets to cool, then peel and slice them.
  5. In a large bowl, toss the arugula with olive oil, salt, and pepper.
  6. Arrange the arugula on a serving platter and top with sliced beets.
  7. Sprinkle crumbled goat cheese and toasted walnuts over the salad.
  8. Drizzle with balsamic glaze before serving.
