A vibrant and colorful salad featuring roasted beets, citrus fruits, and creamy goat cheese, perfect for a festive holiday table.
Ingredients
- 4 medium beets, roasted and sliced
- 2 oranges, peeled and segmented
- 1 grapefruit, peeled and segmented
- 100g goat cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Wrap each beet in aluminum foil and roast in the oven for 45-60 minutes until tender. Let them cool, then peel and slice.
- In a large bowl, combine the roasted beets, orange segments, and grapefruit segments.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
- Toss gently to combine all ingredients.
- Transfer the salad to a serving platter and sprinkle with crumbled goat cheese.
- Garnish with fresh mint leaves before serving.
Notes
- For added crunch, consider adding toasted walnuts or pecans.
