Description

A vibrant and colorful salad featuring roasted beets, citrus fruits, and creamy goat cheese, perfect for a festive holiday table.


Ingredients

  • 4 medium beets, roasted and sliced
  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 100g goat cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh mint leaves for garnish


Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wrap each beet in aluminum foil and roast in the oven for 45-60 minutes until tender. Let them cool, then peel and slice.
  3. In a large bowl, combine the roasted beets, orange segments, and grapefruit segments.
  4. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  5. Toss gently to combine all ingredients.
  6. Transfer the salad to a serving platter and sprinkle with crumbled goat cheese.
  7. Garnish with fresh mint leaves before serving.

Notes

  • For added crunch, consider adding toasted walnuts or pecans.
