Description
A traditional Polish dish, pierogi are dumplings filled with a variety of ingredients, offering a delicious taste of Eastern Europe.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup water
- 1 egg
- 1/2 teaspoon salt
- 1 cup mashed potatoes
- 1/2 cup cheese (such as farmer’s cheese or cheddar)
- 1 onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.
- Knead the dough on a floured surface until smooth, about 5 minutes. Cover and let rest for 30 minutes.
- In a skillet, melt the butter over medium heat. Add the chopped onion and cook until translucent.
- In a bowl, combine the mashed potatoes, cheese, and cooked onions. Season with salt and pepper.
- Roll out the dough to about 1/8 inch thickness. Cut into circles using a cookie cutter or glass.
- Place a spoonful of the potato mixture in the center of each circle. Fold the dough over and seal the edges with a fork.
- Bring a large pot of salted water to a boil. Add the pierogi and cook until they float to the top, about 3-5 minutes.
- Remove with a slotted spoon and serve warm.
Notes
- You can freeze uncooked pierogi for later use.
- Serve with sour cream or fried onions for extra flavor.
