Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cups frozen mixed vegetables
- 1 can cream of mushroom soup
- 1 cup shredded cheddar cheese
- 4 cups sliced potatoes
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft.
- Drain any excess fat from the skillet.
- In a large bowl, combine the cooked beef and onion mixture with the frozen mixed vegetables, cream of mushroom soup, and half of the shredded cheddar cheese. Mix well.
- In a greased baking dish, layer the sliced potatoes evenly on the bottom.
- Pour the beef and vegetable mixture over the potatoes, spreading it evenly.
- Sprinkle the remaining cheddar cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving.
