Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups frozen mixed vegetables
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 4 cups sliced potatoes
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft.
  3. Drain any excess fat from the skillet.
  4. In a large bowl, combine the cooked beef and onion mixture with the frozen mixed vegetables, cream of mushroom soup, and half of the shredded cheddar cheese. Mix well.
  5. In a greased baking dish, layer the sliced potatoes evenly on the bottom.
  6. Pour the beef and vegetable mixture over the potatoes, spreading it evenly.
  7. Sprinkle the remaining cheddar cheese on top.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  10. Let the casserole cool for a few minutes before serving.
