Description

Nigerian Jollof Rice is a popular West African dish known for its rich and spicy flavors, made with rice, tomatoes, and peppers.


Ingredients

  • 2 cups of long-grain parboiled rice
  • 1/4 cup of vegetable oil
  • 6 ripe tomatoes, blended
  • 4 red bell peppers, blended
  • 2 onions, chopped
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 2 cups of chicken stock
  • Salt to taste
  • 1 teaspoon of black pepper
  • 1 bay leaf


Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Stir in the blended tomatoes and red bell peppers, and cook for about 10 minutes.
  4. Add the thyme, curry powder, salt, black pepper, and bay leaf. Stir well.
  5. Pour in the chicken stock and bring to a boil.
  6. Add the rice and reduce the heat to low. Cover the pot and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork and serve hot.

Notes

  • For added flavor, you can include smoked fish or chicken.
  • Adjust the spice level by adding more or fewer peppers.
