Description
Nigerian Jollof Rice is a popular West African dish known for its rich and spicy flavors, made with rice, tomatoes, and peppers.
Ingredients
- 2 cups of long-grain parboiled rice
- 1/4 cup of vegetable oil
- 6 ripe tomatoes, blended
- 4 red bell peppers, blended
- 2 onions, chopped
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 2 cups of chicken stock
- Salt to taste
- 1 teaspoon of black pepper
- 1 bay leaf
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Stir in the blended tomatoes and red bell peppers, and cook for about 10 minutes.
- Add the thyme, curry powder, salt, black pepper, and bay leaf. Stir well.
- Pour in the chicken stock and bring to a boil.
- Add the rice and reduce the heat to low. Cover the pot and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
Notes
- For added flavor, you can include smoked fish or chicken.
- Adjust the spice level by adding more or fewer peppers.
