A fragrant and soul-warming Moroccan Chickpea Stew perfect for winter comfort.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until onion is translucent.
- Add sliced carrots, ground cumin, and ground cinnamon, cook for another 2 minutes.
- Stir in chickpeas, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier stew, add a pinch of cayenne pepper.
- Serve with crusty bread for a complete meal.
