Ingredients

  • 4 large bell peppers
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh basil
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine cooked quinoa, feta cheese, parsley, mint, basil, tomatoes, red onion, and olive oil. Season with salt and pepper.
  4. Stuff each bell pepper with the quinoa mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake in the preheated oven for 25-30 minutes, until the peppers are tender.
  7. Remove the foil and bake for an additional 5 minutes to lightly brown the tops.
