Description

Mediterranean Quinoa Tabbouleh is a fresh and zesty summer salad that is nutrient-packed and perfect as a side dish.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup chopped parsley
  • 1/2 cup diced cucumber
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring 2 cups of water to a boil.
  3. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  4. Remove from heat and let it cool.
  5. In a large bowl, combine the cooked quinoa, parsley, and cucumber.
  6. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  7. Pour the dressing over the quinoa mixture and toss to combine.
  8. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added flavor, consider adding chopped mint or tomatoes.
