Description
A refreshing and protein-packed Mediterranean Lentil Salad perfect for a healthy lunch.
Ingredients
- 1 cup lentils, rinsed and drained
- 2 cups water
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender. Drain and let cool.
- In a large bowl, combine the cooked lentils, cucumber, tomatoes, feta cheese, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to 2 days for flavors to meld.

- For added flavor, consider adding olives or a sprinkle of oregano.
