Ingredients

  • 1 cup lentils, rinsed and drained
  • 2 cups water
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender. Drain and let cool.
  2. In a large bowl, combine the cooked lentils, cucumber, tomatoes, feta cheese, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for up to 2 days for flavors to meld.
