Ingredients
- 1 cup rice flour
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 cup water
- 1/2 cup crushed peanuts
- 1/4 cup sweet corn kernels
- 2 tablespoons butter
Instructions
- In a bowl, mix rice flour, all-purpose flour, sugar, baking powder, baking soda, and salt.
- Add the egg and water to the dry ingredients and whisk until smooth.
- Heat a non-stick pan over medium heat and lightly grease with butter.
- Pour a ladle of batter into the pan, spreading it evenly to form a thin layer.
- Sprinkle crushed peanuts and sweet corn kernels over the batter.
- Cover the pan with a lid and cook until the edges are crispy and the center is cooked through.
- Fold the pancake in half and remove from the pan.
- Repeat with the remaining batter and filling.
