Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cup cucumber, diced
  • 1/2 cup parsley, chopped
  • 1/4 cup red onion, finely chopped


Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. In a small bowl, whisk together tahini, lemon juice, olive oil, garlic, salt, and pepper.
  4. In a large bowl, combine cooked quinoa, cucumber, parsley, and red onion.
  5. Pour the tahini dressing over the quinoa mixture and toss to combine.
  6. Adjust seasoning with additional salt and pepper if needed.
  7. Serve chilled or at room temperature.

Notes

  • For added flavor, consider adding a pinch of cumin to the dressing.
  • This salad can be made a day ahead and stored in the refrigerator.
