A bright, nutty, and refreshing Lemon Tahini Quinoa Salad perfect for a healthy lunch.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 cup cucumber, diced
- 1/2 cup parsley, chopped
- 1/4 cup red onion, finely chopped
Instructions
- Rinse the quinoa under cold water.
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
- In a small bowl, whisk together tahini, lemon juice, olive oil, garlic, salt, and pepper.
- In a large bowl, combine cooked quinoa, cucumber, parsley, and red onion.
- Pour the tahini dressing over the quinoa mixture and toss to combine.
- Adjust seasoning with additional salt and pepper if needed.
- Serve chilled or at room temperature.
Notes
- For added flavor, consider adding a pinch of cumin to the dressing.
- This salad can be made a day ahead and stored in the refrigerator.
